  • 2 cloves of garlic.
  • 500 grams of grated natural tomato or a can of crushed tomato.
  • 250 ml of white wine.
  • Sweet paprika.
  • Ground black pepper.
  • -Cumin.
  • -1 bay leaf.
  • -Tomillo.
  • -Clavo molido.
  • Vinegar.
  • Extra virgin olive oil.
  • -Get out.
  • -Water.

To make it quicker, we can ask at the fishmonger's for strips of squid. If you prefer the whole squid and clean it at home, do the same as with the squid. Remove the skin and fins. Remove the mouth and turn over to clean the inside. Cut the body, fins and tentacles into strips.

Chop the onion, green pepper and garlic. In a casserole or cauldron, fry very well over medium heat with extra virgin olive oil.

When the onion starts to become transparent, add a generous spoonful of paprika and quickly add the grated or crushed tomato. It is very important to add the tomato quickly so that it provides liquid and the paprika does not burn, as it would become bitter.

The recipe for Potatoes in Canarian Sauce

Season with salt, pepper, cumin and cloves to taste and let the tomato cook over medium heat. If the tomato is too acidic, you can reduce it with a pinch of baking soda.

When the tomato is cooked, add the squid strips and the white wine. Turn up the heat so that the alcohol in the wine evaporates.

When it is evaporated, add water until it covers all the stew and lower the heat to medium until it starts to boil.

Add a splash of vinegar, thyme and bay leaf and cook over a low heat until the squid is tender. Serve hot.

The trick is to cook them over a low heat tomake them tender. But if you want to be sure, put the squid strips to soak in milk for at least half an hour before cooking them. When you put them in the stew, drain the excess milk well, but without rinsing them. You'll see how tender they are!
