Just as in the Canary Islands, buses are called guaguas, the classic bizcocho, or sponge cake, is called queque canario.

What is the canary cake

The homemade Canary Island cakes are very simple to prepare, with a wonderful spongy texture . But, what is the story of the canary cakes?

The Canary Islands have always been an important place of passage, not in vain is the bridge between Europe, Africa and America, so the cultural influences in the archipelago are very varied and rich.

One of the cultural influences that has left its mark on the Fortunate Islands comes from the intense trade relationship they had with Great Britain throughout the 19th century, which focused especially on wine and sugar cane.

It was in those years that some exchanges of words took place between the English and the Canaries, one of them being quequeque.

You mightwonder what's so Anglo-Saxon about the word "cake." Well, it is. In the English language, a cake is called "cake", and its pronunciation is something like "queik". The Canaries changed the pronunciation of the word until they reached the current "queque".

Ingredients

Although there are many ways to prepare one of these cakes, the ingredients we are going to point out below are those you will need to make a Canary Island yogurt cake:

  • A lemon yogurt.
  • Two measures of sugar yogurt.
  • Three measures of flour yogurt
  • A measure of olive oil yogurt.
  • Four eggs.
  • Lemon peel.
  • One tablespoon of baking powder.
  • Get out.
  • Cinnamon.
  • Butter for the mould.
  • Flour for the mold.

How to make homemade canary cakes

With the ingredients that we have indicated in the previous point you can start working to elaborate a delicious canary cake. These are the steps you must follow:

  • Turn the oven on and set it at 170 °C, with heat at the bottom and at the top.
  • Take a crown mold and butter it. Sprinkle with flour, making sure it is evenly distributed over the entire surface.
  • Separate the yolks from the whites.
  • Beat the yolks until they're nice and frothy. Add the oil and yogurt and beat until well blended.
  • Add the flour, yeast, salt and cinnamon (sifted), and stir until the mixture is homogeneous. Set aside.
  • Rack up the egg whites with the snowy sugar
  • Gradually incorporate the mounted egg whites into the mixture using encircling movements, so that the dough is well aerated.
  • Pour the mixture into the pan and bake for about 40 minutes (or until the skewer comes out dry when the cake is punctured). Under no circumstances should you open the oven while the cake is still increasing in volume.
  • Take the mold out of the oven and place it on a rack. Unmould it when its temperature is warm and let it cool down on the rack.

Remember that if you use crown moulds the heat will be better distributed and the cake will bake sooner, but you can also use rectangular or round moulds without any problem.

The Canarian lemon yogurt cake is the most typical in the archipelago, although you can also use yogurts of other flavors or natural. If, for example, your choice is a coconut yogurt, instead of enriching the cake with lemon rind you will have to make it with coconut rind.

Canarian banana cakes recipe without sugar or sweetener

We cannot finish without referring to the cake made with the most emblematic fruit of the Canary Islands: the banana. Furthermore, we are going to tell you how to make this recipe so that it is light and not so fattening, as it lacks sugar and any kind of sweetener.

The ingredients you will need to make this canary cake are the following:

  • 140 grams of wheat flour.
  • Two tablespoons of baking powder.
  • Two eggs.
  • Two bananas from the Canary Islands.
  • 80 ml of milk.
  • Two tablespoons of butter.

The steps to follow are as follows:

  • Peel and slice the bananas. Put them in the blender.
  • Add the eggs and beat them in the blender together with the bananas.
  • Pour in the butter and milk at room temperature.
  • Beat at medium speed and slowly add the flour, already mixed with the baking powder.
  • When everything is integrated it is time to pour the dough into a greased mould. It can be rectangular or circular, as you prefer.
  • Bake the cake for about 40 minutes using only the heat from below. After 30 minutes you can put the heat from above.
  • You have to wait for it to cool down before you unmold it. The result will be a fluffy and perfect canary cake that will be ideal for breakfast or snack time.
