In Guía de Isora, on the southwest coast, and in the middle of a volcanic landscape and tropical flora, is the Ritz-Carlton Abama. And among its twelve luxury bars and restaurants is Txoko, under the baton of award-winning chef Martin Berasategui. Its dishes are based on traditional Spanish cuisine, with proposals such as mushroom or squid croquettes, patatas bravas, cannelloni, salad, tripe or stewed cheeks. The carpaccio of pompano fish with red mojo is excellent. Canarian cuisine is also present: black piglet, tupinambo or wrinkled potatoes. A whole recipe book of dishes that combine good raw materials and the experience of this great chef.
