How to prepare churros of canary fish

As it could not be less in an archipelago like the Canary Islands, the products of the sea are a fundamental part of its varied and tasty gastronomy. Among the seafood dishes of the islands, those known as " churros de pescado" stand out, present in the menus and menus of many of the most popular bars, restaurants and guachinches.

The churros of Canarian fish, very similar to the soldiers of Pavia that are consumed in Madrid and in some parts of Andalusia, are cuts of fish that have approximately the thickness and the length of a finger, and that are prepared battered in a tempura and fried.

Its name is due to the fact that the visual result resembles the famous breakfast churros.

The churros de pescado are as much a delicious and attractive tapa at appetizer time as they are to accompany any good salad. There is even no problem serving it as a main dish on the menu.

They can be tasted alone (they don't lack taste) or, if you want to give them some more joy, accompanied by some sauce.

As for the fish with which you can prepare this delicious Canarian dish, any white fish can be served, such as rooster, sole, sea bass or hake.

This type of fish not only contributes its excellent flavor to the recipe, it is also lean fish with a high protein content that is very beneficial for the formation of tissues and muscles in our body.

By providing a lot of phosphorus, they improve our teeth and bones. Finally, its richness in vitamin B12 promotes the formation of red blood cells and prevents anaemia. Come on, they're not only great, they're also very healthy.

How to make fish churros

Although we can serve you any white fish, for the recipe we are going to show you we have preferred to choose hake, one of the great stars in any Spanish cuisine, starting with the Canary Islands. Of course, it's better if it's fresh, although if it has to be frozen we're not going to back down. The result will not be optimal, but it will be very good.

The best way to accompany these fish churros will be with a good and fresh salmon salad with prawns and gluttony, although this is only a suggestion.

Churros de pescado, a recipe for finger-licking

The ingredients of these canary fish churros are for 4 people. This is what you'll need:

  • -Half kilo of hake.
  • -Beer: one bottle (with or without alcohol).
  • -Parsley.
  • -Garlic cloves: 3.
  • -Food coloring.
  • -Egg: 1.
  • -Flour: 200 grams.
  • -Milk: 50 millilitres (can be normal, soy, lactose free or whatever you like).
  • -Olive oil.
  • -Get out.

Who can resist some canary fish churros

Let us now see the steps you must follow for its elaboration:

  1. 1. Cut the hake into sticks and check that no bones remain.
  2. 2. Prepare a mixture of parsley, salt and garlic and spread it on the hake.
  3. 3. Pour the sifted flour into a bowl incorporating the beaten egg, the beer, the colouring and a pinch of salt.
  4. 4. Mix everything well until you get a paste similar to mashed potatoes.
  5. 5. Put plenty of olive oil in a frying pan and put it on the heat.
  6. 6. After passing through the dough, put the pieces of fish in the frying pan 3 or 4 at a time, with the very hot oil.
  7. 7. Let both sides be browned until it reaches a nice uniform color.
  8. 8. Take the fish churros out of the pan and place them on a plate with paper towels until they are all done.

And you already have a fabulous plate of canary fish churros for 4 people.

When and where to test them

You can enjoy a good tapa or churros de pescado dish all year round. It is very common in many restaurants on the islands, so you will have no problem finding them.

Some of the restaurants that have a reputation for serving delicious fish churros are El Puntero and Los Churritos in Santa Cruz de Tenerife and Las Lagunetas in Las Palmas de Gran Canaria.
